Short-cut Tuna Puff

If you don't want to go through the hassle of making the pastry, this is another short cut way of making tuna puff. I used the frozen prata bought from NTUC to subsitute the pastry. The taste is not far from the usual tuna puff. I believe this bake version is slightly healthier than the deep fried one.

Shot-Cut Tuna Puff

Ingredients:

1 can tuna mayonnaise
2 whole large onions (finely cut)
some pepper
8 slices prata (I used chinatown brand)

Method:

1. Mix well the tuna mayonnaise, onions and pepper in a bowl

2. Cut the prata into half.

3. Wrap the ingredients into the prata. Use a fork to press on the edge of the fold to create some patterns. It will be easy to cut and wrap the prata when it is still semi-frozen as it turns sticky when soft.

4. Bake in pre-heated oven at 170 degC for 20 mins or until golden brown.

Oreo Mango Cheesecake

I like mango and I like cheesecake. Putting the two ingredients to make this mango cheesecake is definitely a prefect match for me. You can see that the whole cake is filled with the awesome mango flan layers, cubes and purees made from 100% fresh Thailand honey mangoes. The black oreo biscuits base gives a nice contrast with the cheese and mango flan layers on top and it really blends well in taste. Even my girl who does not like mangoes also likes it and asks for more. I have been searching for this kind of recipe for a long time and even went for baking classes for mango cheesecakes but could not find the recipe close to this. I am very grateful that a new friend I met in my one of the baking classes recently is willing to share her recipe with me. Thanks Eunice for your kindness and helpfulness! As promised, I cannot share the recipe as she is selling it in her blog here
